This Crockpot Salsa Chicken needs 3 ingredients and about 2 minutes of your attention. Chicken, a jar of salsa, and a handful of cheese that melts right in the slow cooker, so there’s no oven and no second dish to wash. Serve it whole or shred it for tacos.

There’s a particular kind of relief that comes from a recipe with 3 ingredients where 2 of them come out of a jar and a bag.

Your Salsa Is The Whole Recipe
With 3 ingredients there’s nowhere to hide, so this matters more than it would anywhere else.
- Buy one you’d happily eat with chips. If you wouldn’t scoop it out of the jar, don’t put 2 cups of it on 2 pounds of chicken and hope for the best. The salsa is doing all the seasoning here.
- Chunky over smooth. Chunky salsa holds its texture through a long cook and gives you something to spoon over the chicken at the end. Smooth salsa turns into a thin sauce.
- Watch the heat. Salsa that tastes mild from a chip gets more assertive when it’s been concentrating for a couple of hours. I use mild and let people add hot sauce at the table.
- And check the sodium. This is where all the salt in the recipe comes from, and jarred salsa varies enormously between brands. If you’re watching sodium, a low sodium salsa makes a real difference to the finished dish.
- Verde works too, and it’s a different recipe in a good way. Tomatillo salsa gives you something brighter and tangier, and it’s excellent shredded into tacos.

- Chicken breasts (2 pounds, boneless and skinless, about 4): Whole breasts, not cut up, so they stay juicy through the cook. Thighs work beautifully and are more forgiving, and they need a bit longer. My homemade salsa works if you have some, though the jar is the point of this recipe.
- Salsa (2 cups, about 1 jar, mild): See above. This is the flavor, so buy something you actually like. Chunky is better than smooth here.
- Mexican blend cheese (1 cup, shredded): A pre shredded blend is genuinely fine here and it’s what I use, because it’s going straight onto hot chicken rather than into a sauce where the anti caking starch would matter. Cheddar, Monterey Jack, or pepper jack all work. Pepper jack if you want a bit of heat.
How To Make Crockpot Salsa Chicken

Chicken in the crockpot. Whole breasts, laid in a single layer if you can. Overlapping is fine, they’ll just cook slightly unevenly.
Salsa over the top. All of it, poured evenly so every breast is covered.

Cook it. 1½ to 2 hours on high, or 4 hours on low. And here’s the thing worth knowing: don’t leave it longer than that. Chicken breast in a slow cooker goes from perfect to falling apart faster than most things, and unlike a beef roast it doesn’t get better with time. It gets stringy.
Check with a thermometer if you have one. 165°F in the thickest part is done. Slow cookers vary considerably between brands and a newer one often runs hotter than you’d expect, so start checking at 1½ hours on high.

Cheese in, lid back on. Scatter the cheese evenly over the chicken, put the lid back on, and leave it 5 to 10 minutes. The residual heat melts it perfectly and you never touch the oven.
Serve. Whole breasts with the salsa spooned over, or take 2 forks and shred it right in the pot so everything mixes together. Cilantro and a squeeze of lime over the top if you have them, and the lime in particular makes a bigger difference than you’d think.

Add 4 ounces of cream cheese, cut into cubes, in the last 30 minutes of cooking. Stir it through once it’s soft and it melts into the salsa to make a creamy sauce that coats everything.
It’s excellent shredded and piled into tortillas, and it makes a very good dip if you keep shredding until it’s fine and serve it warm with chips.
Full fat cream cheese works better than the lighter versions, which can go slightly grainy. And if you’re doing this, hold the shredded cheese until after the cream cheese has melted in.
Variations
- Shredded for tacos. Shred it in the pot, add lime juice and chopped cilantro, and pile it into warm corn tortillas with diced onion.
- Burrito bowls. Over cilantro lime rice with black beans, corn, and avocado.
- With beans and corn. Stir in a drained can of black beans and a cup of corn in the last 30 minutes. Stretches it further and makes it a complete meal.
- Verde. Swap the salsa for salsa verde. Brighter, tangier, and very good with a bit of sour cream.
- Spicy. Hot salsa, or a diced jalapeño in with the chicken, or pepper jack instead of the Mexican blend.
- Instant Pot. Add ¼ cup of water along with the salsa to avoid a burn message. High pressure for 10 minutes for whole breasts with a quick release, or 15 minutes with a 5 minute natural release if you want it shredded. And unlike the slow cooker, frozen chicken is fine in the Instant Pot.
What To Serve With Salsa Chicken
Rice is the easiest answer, and cilantro lime rice makes it feel like more of a full meal. Mexican rice works too.
Black beans or refried beans on the side, and warm tortillas so people can build their own. That’s my usual setup because everyone gets what they want and I’ve done almost nothing.
For something fresh against all that warm richness, I like a shredded cabbage, carrot, and kale salad with a sharp dressing. Corn salad works beautifully. And a bowl of avocado or guacamole are always great here.
Toppings on the table make it a meal rather than just chicken: sour cream, diced red onion, cilantro, sliced jalapeño, and lime wedges.
Make Ahead And Storage
Fridge: 4 days in an airtight container. Shred it before storing, because shredded chicken reheats more evenly and it’s ready to grab.
Freezer: 3 months. This freezes really well, especially shredded with the salsa mixed through, since the salsa keeps it from drying out. Portion it into bags and lay them flat.
Reheating: a skillet over medium with a splash of water is best and takes 5 minutes. The microwave works, covered, in 30 second bursts.
Meal prep: this is one of the best things you can cook on a Sunday. Two pounds shredded fills a lot of containers, and it goes into a different meal every day without anyone getting bored. Bowls, tacos, quesadillas, salad, nachos.
