Just like the restaurant favorite these delicious Pork Fajitas are sure to satisfy any and all appetites! Full of colorful flavors, easy to prepare, and served with homemade guacamole!

Don’t these look delicious?! I have just as much fun making these fajitas as I do eating them! This is one of my favorite recipes to make during the week because they are just too easy! Not to mention, super delicious and versatile – you can basically make them with any ingredients you please!

These pork fajitas are full of zesty ingredients; onion, bell peppers, cilantro, and lime! Did I mention I even have my own homemade fajita seasoning recipe? You’re welcome! It’s like bringing the restaurant version home to your own table – and don’t even get me started on the homemade guacamole! Not only is this dish tasty as can be, but it’s also pretty low on the good ole scale of calories, so I’m counting this recipe as a win win!

What exactly are Fajitas?

Fajitas are a Mexican cuisine and typically consist of grilled meat served as a taco or on a flour or corn tortilla. The term originally referred to skirt steak – as they say this was the first cut of meat used in this dish. Today however, there are many variations of this dish, including different varieties of meat, seafood, or simply just vegetables!

Fajitas:

  • Pork – I’m using 2 lbs of pork tenderloin today.
  • Onion – 2 medium white onions, sliced into long strips.
  • Bell peppers – I used 1 red and 1 yellow bell pepper, cut into long strips – you can use any color you prefer!
  • Olive oil – For cooking.
  • Cilantro – It wouldn’t be fajitas or Mexican without it!
  • Lime – 1 lime, cut into wedges.
  • Seasoning – Fajita seasoning – taco seasoning will also work if you can’t find the fajita option!
  • Tortillas – White flour tortillas – but  you can use any brand or variation you like! Corn tortillas are also fine.

Guacamole: 

  • Avocado – 2 ripe avocados.
  • Lime – About 2 tbsp of juice from a fresh lime.
  • Tomato – Diced, please!
  • Green onion – I’m using 3 green onions, chopped.
  • Salt and pepper – To taste.

Can I use a different meat?

Of course you can! Fajitas can be made with chicken, beef, shrimp, and even as a vegetarian option with tofu or mushrooms! It’s an incredibly versatile recipe and you can put whatever spin you like on it!

How to make Pork Fajitas

  1. Prepare veggies: In a large bowl, combine sliced peppers, sliced onion, and 1 1/2 tbsp of fajita seasoning; toss and set aside.
  2. Prepare pork: Clean and slice pork tenderloin into long strips. Using the remaining fajita seasoning, sprinkle over the sliced pork – ensuring each piece is well seasoned.
  3. Cook pork: Heat the olive oil over medium-high heat in a large skillet and add the pork. Cook for 5 – 10 minutes, until it is fully cooked and slightly charred, but not burned. Once cooked, removed from skillet, and wipe skillet clean.
  4. Cook veggies: Heat more olive oil over medium heat in the same skillet and add the bowl of veggies. Cook for about 5 minutes, or until the onion is caramelized and the peppers are soft. Add the pork back to the skillet and cook for another 1 minute or so.
  5. Prepare guacamole: In a separate dish, peel the avocados and mash them, adding in the tomato, lime juice, and green onion. Season with some salt and pepper to taste.
  6. Assemble: Using the tortillas, assemble the fajita by adding the pork, veggies, and guacamole – in no particular order! Finally, garnish with a finishing touch of cilantro, if preferred!

Other additions

You can have a lot of fun with this! Add your favorites or any ingredients you think would taste delicious wrapped up cozy in a tortilla! Here are some ideas:

  • Chicken
  • Mushrooms
  • Beef
  • Beans – any and all kinds!
  • Corn
  • Shrimp
  • Cheese
  • Avocado
  • Mango
  • Lettuce
  • Tomatoes
  • Grilled pineapple

Make ahead

Yes you can! If you cook all of your ingredients, stick them together and wrap them up real tight or place in an airtight container, they’re going to last in the fridge for up to 4 days. If you’re thinking of freezing before serving, the shelf life extends for up to 10 – 12 months! This recipe is perfect for making ahead of time!

Leftovers

Oh have some fun with this, you guys! If you want to use up that extra pork and veggies – use it as stuffing in peppers, eggplant, make a stir-fry over rice or noodles! Heck, if you also have extra tortillas just turn around and make a pork or grilled veggie quesadilla – another one of my Mexican favorites! Your options are endless here, so get creative!

Ingredients

  • 2 medium onions
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 tbsp fajita seasoning or to taste
  • 2 lbs pork tenderloin
  • 2 tbsp olive oil
  • fresh cilantro for garnish
  • 1 lime cut into wedges
  • 8 small tortillas

For guacamole

  • 2 avocados
  • 2 tbsp lime juice from 1 lime
  • 1 tomato diced
  • 3 green onions chopped
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper or to taste
US Customary – Metric

Instructions

  • Clean and slice the onions into long strips. Slice the peppers into long strips as well. Place peppers and onions in a large bowl, sprinkle 1 1/2 tbsp of the fajita mix over the onions and peppers and toss.
  • Clean and slice the pork tenderloin into long strips and place in a bowl. Sprinkle the remaining 1 1/2 tbsp of fajita mix over the pork and stir to make sure each piece of pork is seasoned well.
  • In a large skillet, heat 1 tbsp of the olive oil over medium high heat and add the pork to it. Cook the pork for 5 to 10 minutes until it’s fully cooked, and it’s slightly charred, but not burned.
  • Remove the pork from skillet, and wipe the skillet clean.
  • Add another tbsp of olive oil to the skillet and heat it up. Add the onion and pepper mixture and cook for about 5 minutes until the onion is caramelized and the peppers are soft. Add the pork back to the skillet, mix with peppers and onions and cook for a minute.
  • To make the guacamole, mash the avocados in a small bowl, then add the rest of the ingredients and stir well.
  • Assemble the tortillas, add some pork, onion, peppers, and top with avocado. Garnish with cilantro if preferred.

Recipe Notes

  1. If you can’t find fajita seasoning, you can make your own or use taco seasoning.
  2. You can make these with beef or chicken too.
  3. Nutritional information includes the guacamole.
