A few small adjustments make a big difference.

  • Salt your pasta water generously. It should taste properly seasoned before the pasta goes in.
  • Cook pasta just shy of al dente if it will finish in sauce.
  • Save some pasta water. A few tablespoons can loosen and emulsify sauces beautifully.
  • Finish pasta in the sauce whenever possible. That’s how you get flavor in every bite.

Plan on about 2 ounces (56 g) of dry pasta per person for a main dish. If you’re feeding big appetites or serving fewer sides, increase slightly.

Make Ahead & Storage

Most pasta dishes keep well in the fridge for up to 4 days in an airtight container.

For baked pastas, you can assemble ahead and refrigerate before baking. Add an extra 5–10 minutes to baking time if going straight from the fridge.
