Greek Cucumber Salad

I love this cucumber salad, it is very refreshing and super easy to make. If you’re not a fan of dill, you can skip it, but personally I love fresh dill, and I love cooking with it, I just love the smell of it and the flavor. Recently I’ve been using dill in pretty much everything I’ve been cooking and especially in this refreshing and wonderful Greek cucumber salad. The combination of cucumber, dill, yogurt and feta, is definitely a winner in my eyes.

Start by cutting up the cucumber. I used an english cucumber for this, so feel free to cut it in slices or in cubes as I did.

Chop up the dill next. Now as I said I love dill, so I used about 1/4 cup of dill, so if you’re not a fan of dill, just skip this step.

Place the cucumber and dill in a medium size bowl. To the bowl add about 1/4 cup of Greek yogurt.

Next, add 1/4 cup of crumbled up feta cheese to the bowl.

Now you can add some salt and pepper, however, I always skip the salt because for my taste the feta cheese is salty enough as it is. Mix everything together well and serve.

Ingredients:

  • 1 English cucumber chopped or sliced
  • 1/4 cup Greek yogurt
  • 1/4 cup Feta cheese
  • 1/4 cup chopped fresh dill
  • salt and pepper to taste

Instructions:

  1. Mix all ingredients together in a bowl and serve.
