I love Easter brunch because it feels a lot more relaxed than a big holiday dinner. You don’t need a huge roast or a complicated menu. A few egg dishes, something sweet like muffins or cinnamon rolls, some potatoes, fruit and maybe a make ahead casserole and you’ve got a really great spread. The best part is that a lot of these recipes can be made ahead of time so you’re not stuck in the kitchen all morning.
