If anyone has earned the right to talk about one pot meals, it’s me. I literally wrote the book on them. Actually, I wrote two books, and one of them is called 30 Minute One Pot Meals. So when I say these recipes are done in 30 minutes using one pot, I mean it. No asterisks. No “prep time not included.” Start to finish, 30 minutes.

I’ve been cooking and developing recipes on JoCooks since 2011. One pot cooking isn’t a trend I jumped on. It’s been the foundation of this blog from the beginning, because real life is busy, weeknights are chaotic, and nobody wants to spend 45 minutes scrubbing a Dutch oven at 9pm.
These 30 recipes are the ones I come back to over and over. Some are reader favorites that have been on the blog for years. Some went viral recently because, well, they’re that good. All of them are genuinely done in 30 minutes, genuinely made in one pot or one pan, and genuinely worth making tonight.

A Few Things Worth Knowing
One pot really means one pot. Every recipe on this list cooks start to finish in a single pan, skillet, or pot. Not one pot plus a colander plus a separate sauce pan. One.
30 minutes includes prep. I’m not interested in recipes that say “30 minutes” and mean 30 minutes of cook time after 20 minutes of chopping. These are 30 minutes total.
A good pan makes a difference. Most of these work best in a large, heavy skillet or Dutch oven. It doesn’t have to be fancy. It just needs to be big enough and have a lid.
