If anyone has earned the right to talk about one pot meals, it’s me. I literally wrote the book on them. Actually, I wrote two books, and one of them is called 30 Minute One Pot Meals. So when I say these recipes are done in 30 minutes using one pot, I mean it. No asterisks. No “prep time not included.” Start to finish, 30 minutes.

A collage of four one pot meals including skillet sausage and mushroom rice, lemon garlic shrimp orzo, creamy tomato chicken pasta, and orecchiette with sausage and broccoli, with text overlay reading 30 Easy One Pot Meals Ready in 30 Minutes.

I’ve been cooking and developing recipes on JoCooks since 2011. One pot cooking isn’t a trend I jumped on. It’s been the foundation of this blog from the beginning, because real life is busy, weeknights are chaotic, and nobody wants to spend 45 minutes scrubbing a Dutch oven at 9pm.

These 30 recipes are the ones I come back to over and over. Some are reader favorites that have been on the blog for years. Some went viral recently because, well, they’re that good. All of them are genuinely done in 30 minutes, genuinely made in one pot or one pan, and genuinely worth making tonight.

The 30 Best One Pot 30 Minute Meals

Overhead view of skillet sausage and mushroom rice cooking in a pan with smoked sausage, mushrooms, rice, and fresh parsley.

Skillet Sausage and Mushroom Rice

This one took off on social media and it's easy to see why. Savory sausage, earthy mushrooms, and rice that soaks up every bit of flavor, all in one skillet. It looks impressive. It takes 30 minutes. That's the kind of cooking I live for.
View
Overhead view of lemon garlic shrimp orzo topped with juicy shrimp, fresh herbs, and lemon slices in a white bowl.

Lemon Garlic Shrimp Orzo

Another one that readers can't stop making. Bright, fresh, and ready faster than you'd expect. The orzo cooks right in the pan with the shrimp, soaking up all that lemony, garlicky goodness. One pot, zero regrets.
View
freshly made creamy tomato chicken pasta in a skillet.

Creamy Tomato Chicken Pasta

This one went viral for good reason. Creamy, rich, deeply flavored and on the table in 30 minutes flat. If you haven't made this yet, tonight is the night.
View
orecchiette with sausage and broccoli in a white serving bowl.

Orecchiette With Sausage And Broccoli

Simple ingredients, big flavor. The sausage does most of the heavy lifting here, and the broccoli adds just enough substance to make it a complete meal. Readers keep coming back to this one and I understand completely.
View
creamy italian sausage pasta in a white serving bowl.

Creamy Italian Sausage Pasta

Another reader favorite that earns its place on this list every single time. Rich, creamy, loaded with flavor, and made in one pan. If you like sausage and pasta, this one is for you.
View
Close-up of juicy chicken breasts simmering in a cast iron skillet with glossy garlic butter sauce and fresh parsley.

Cowboy Butter Chicken

Butter, garlic, herbs, a little heat. This sauce is ridiculous in the best way. The chicken cooks quickly in one pan and the sauce comes together in minutes. Serve it over rice or with crusty bread to catch every drop.
View
a serving of bourbon chicken over a bed of rice in a white bowl.

Bourbon Chicken

Sweet, sticky, a little smoky. This is takeout chicken made at home in the time it would take you to scroll through the delivery app. I've been making this for years and it never gets old.
View
Wide shot of a large skillet featuring the best chicken marsala recipe with fresh parsley garnish and crusty bread background.

Chicken Marsala

Yes, you can make a proper Chicken Marsala in 30 minutes. Tender chicken in a rich, winey mushroom sauce, all in one pan. This one feels like a restaurant meal without the restaurant bill.
View
overhead shot of coconut chicken curry beside white rice in a bowl

Coconut Chicken Curry

Creamy coconut milk, warm spices, tender chicken. I made this one time with pantry staples I was trying to use up and it became a permanent fixture in my weeknight rotation. Serve over rice and call it dinner.
View
black pepper chicken on a bed of rice on a black plate.

Black Pepper Chicken

Bold, peppery, and genuinely addictive. This stir fry comes together fast and hits harder than you'd expect from something this simple. One pan, 30 minutes, done.
View
overhead shot of pepper steak over a bed of rice in a bowl.

Easy Pepper Steak

It's 6:30pm, Remo is asking what's for dinner, and I have a flank steak in the fridge. This is what I make. Crisp peppers, savory sauce, tender beef, ready in 30 minutes. Every time.
View
freshly made tuscan salmon in a skillet garnished with basil.

Tuscan Salmon

Salmon in a creamy sun dried tomato sauce, ready in under 30 minutes, all in one pan. It looks like you tried. You didn't have to.
View
freshly made chicken lo mein in a big white bowl.

Chicken Lo Mein

Better than takeout, faster than delivery, and made with one pan and ingredients you probably already have. The sauce is the star here. Don't skimp on it.
View
yakisoba noodles with chicken and vegetables in a large serving platter.

Yakisoba

I fell in love with yakisoba at a tiny spot in New York and have been making my own version ever since. Saucy, savory noodles with crisp vegetables and tender chicken. Remo's only complaint is there's never enough chicken. I've started doubling it.
View
a hand pulling up some noodles with chop sticks from a plate full of hoisin chicken with udon noodles

Hoisin Chicken Udon Noodles

Sweet, a little spicy, loaded with chicken and mushrooms. These thick udon noodles soak up the sauce beautifully and the whole thing is on the table in under 30 minutes. One of my favorite weeknight meals, full stop.
View
a serving of chicken green bean stir fry in a white plate with a serving of rice.

Chicken Green Bean Stir Fry

Fast, fresh, and satisfying. The green beans stay crisp, the chicken is tender, and the sauce ties it all together. This one is proof that simple doesn't mean boring.
View
Golden dumplings baked in coconut curry sauce with spoon lifting one from bubbling baking dish.

One Pan Dumplings

Yes, dumplings. One pan. 30 minutes. Crispy on the bottom, tender on top, and made entirely on your stovetop. This one always gets a reaction.
View
cheesy taco orzo in a white bowl.

One Pot Cheesy Taco Orzo

Ground beef, taco seasoning, orzo, cheese. Everything cooks together in one pot and comes out creamy, cheesy and deeply satisfying. This is my kind of comfort food.
View
freshly made chili mac and cheese in a Dutch oven.

Chili Mac and Cheese

Chili and mac and cheese decided to become one dish and honestly it was the best decision. Hearty, cheesy, and made in one pot in 30 minutes. Kids love it. Adults love it. I love it.
View
overhead shot of a serving spoon taking a scoop of skillet lasagna.

Skillet Lasagna

All the flavors of classic lasagna, made in one skillet in 30 minutes. No boiling noodles separately, no layering, no 90 minute oven time. Just good, cheesy, saucy pasta that tastes exactly like you hoped.
View
homemade hamburger helper lasagna from scratch in a skillet.

One Pot Hamburger Helper Lasagna

Ground beef, pasta, marinara, cheese. One pot, 30 minutes. This is the kind of recipe that sounds too simple to be good and then surprises everyone at the table.
View
overhead close up shot of swedish meatball pasta in a beige braised garnished with parsley

Swedish Meatball Pasta

Warm spiced meatballs in a creamy sauce with pasta shells cooked right in the pot. This one tastes like it took all afternoon. It took 30 minutes. Nobody needs to know.
View
a skillet full of creamy sausage tortellini.

Creamy Sausage Tortellini

Pillowy tortellini, savory sausage, creamy sauce. This one comes together so fast it almost feels like cheating. Almost.
View
a serving of pork ragu orzo in a blue plate.

One Pot Spicy Pork Ragu with Orzo

A proper ragu in 30 minutes sounds impossible until you make this. Ground pork, tomatoes, orzo, heat. Everything cooks together and develops real depth of flavor. This one punches well above its weight.
View
a serving of chicken florentine gnocchi in a black plate.

One Pot Chicken Florentine Gnocchi

Tender chicken, pillowy gnocchi, creamy sun dried tomato sauce, all in one pot. This one feels like a restaurant dish and takes less time than most restaurant reservations.
View
sideview shot of chicken fajita pasta in a dutch oven with a serving spoon inside

Chicken Fajita Pasta

Fajita flavors meet pasta in one pot. It works better than it has any right to. Colorful, bold, and satisfying, this is a weeknight dinner the whole family will actually eat.
View
cheesy chicken broccoli pasta in a skillet freshly made.

Cheesy Chicken Broccoli Pasta

Chicken, broccoli, pasta, a lot of cheese. One pot, 30 minutes. If you need to get vegetables into picky eaters, this is your best option. The cheese helps.
View
a serving spoon inside a skillet with chicken broccoli rice casserole.

30 Minute One Pot Cheesy Chicken Broccoli Rice Casserole

Chicken, rice, broccoli, and cheese all cooked together in one pot. The rice absorbs the broth as it cooks which means every bite is packed with flavor. Creamy, cheesy, and on the table in 30 minutes. This one has been a reader favorite for years and it earns that title every time.
View
a serving of spinach artichoke pasta in a bowl garnished with parmesan cheese.

Spinach Artichoke Pasta

Everything you love about spinach artichoke dip turned into a pasta dish. Creamy, tangy, vegetarian, and ready in under 30 minutes. A good one to have in your back pocket.
View
a serving of fettuccine alfredo in a white bowl with a golden fork.

Fettuccine Alfredo

I saved this one for last because sometimes simple is best. Real Alfredo, made properly, in one pot, in 30 minutes. Butter, Parmesan, pasta water. That's it. Learn this recipe and you'll never need to order it at a restaurant again.

A Few Things Worth Knowing

One pot really means one pot. Every recipe on this list cooks start to finish in a single pan, skillet, or pot. Not one pot plus a colander plus a separate sauce pan. One.

30 minutes includes prep. I’m not interested in recipes that say “30 minutes” and mean 30 minutes of cook time after 20 minutes of chopping. These are 30 minutes total.

A good pan makes a difference. Most of these work best in a large, heavy skillet or Dutch oven. It doesn’t have to be fancy. It just needs to be big enough and have a lid.

Thirty recipes, one pot, 30 minutes

If that doesn’t convince you that weeknight cooking can be painless, I don’t know what will. Remo has eaten every single one of these and lived to tell the tale. That’s my highest endorsement.
